Says Crystal Wall:
“My sister in law belongs to a local co-op where they get all of their fresh vegetables. One time, she kept getting a lot of okra, so everything that we cooked at the time had okra in it. We started to get over okra, but this is one of our success recipes! Enjoy!”
You will need:
1 package of chicken sausage
1 bell pepper chopped
1-2 celery stalks chopped
1/4-1/2 cup white onion chopped
A few chopped green onions
1/2- package of cream cheese (non-fat or lite if you can)
1 1/2 tomatoes cut into chunks
Whole bag of cut okra
1 1/2 cups of chicken broth
1 clove chopped garlic
Salt
Pepper
Worcestershire sauce
Over a medium to hot grill, place sausage in a skillet and drizzle 1/2 cup of chicken broth, then add bell pepper, celery, onions, stir and let the veggies soften. Next add another 1/2 cup of chicken broth, season with Worcestershire sauce to taste, salt/pepper, Italian seasoning, and 1 clove of chopped garlic. Season to your liking while stirring everything together. Add a whole bag of frozen okra, and stir. Then, add tomato. When the tomato stews, add the last 1/2 cup of chicken broth and cream cheese. This is great served over brown or white rice, or over grilled blackened catfish.
